
9°80° Signature Charleston Hot Tomato Pie

Ingredients:
- 5 Roma tomatoes, sliced
- 10 fresh basil leaves, chopped
- 1/2 cup green onions, chopped
- 1 (9-inch) pre-baked pie crust
- 1 cup shredded mozzarella cheese
- 3-4 tablespoons 9°80° Charleston Hot
- 1 cup freshly shredded cheddar cheese
- 3/4 cup mayonnaise
- 2 Tablespoons freshly grated parmesan cheese
Directions:
- Prep Oven and Tomatoes: Preheat your oven to 350°F (175°C). Place the peeled and sliced tomatoes in a single layer in a colander set in the sink. Sprinkle them lightly with salt and let them rest for at least 10 minutes to draw out excess moisture.
- Dry the Tomatoes: Use paper towels to gently pat the tomato slices dry. This step is crucial to prevent a soggy pie.
- Layer the Pie: Arrange the dried tomato slices in the bottom of your pre-baked pie shell. Sprinkle the chopped basil and green onion over the tomatoes. Season lightly with salt and freshly ground black pepper.
- Make the Cheese Topping: In a medium bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, 9°80° Charleston Hot and mayonnaise .Mix until well combined.
- Assemble and Bake: Spread the cheese mixture evenly over the top of the tomatoes and onions, covering them completely. Sprinkle the grated Parmesan cheese over the top.
- Bake and Rest: Bake for 30 minutes, or until the top is lightly browned and bubbly. Let the pie rest for at least 15 minutes before cutting and serving. This allows the pie to set.
