9°80° Pineapple Coconut Overnight Steel Cut Oats with 9°80 Whipped Greek Yogurt

 9°80° Overnight Steel Cut Oatmeal

Ingredients:

2 cups steel cut oats

4 cups almond milk

¼ cup 9°80° Pineapple Coconut  

2 tablespoons vanilla extract

Directions:

Mix the milk, vanilla, and oats into the slow cooker.

Stir and let it cook for 6 hours.

Pour the 9°80° Pineapple Coconut into the mix.

Stir and let it cook for 1 hour.

Set the slow cooker to warm.

Top with 9°80° Pineapple Whipped Greek Yogurt.

Serve with fruit and enjoy!

9°80° Whipped Greek Yogurt

Ingredients:

1 cup whole fat or 2% plain Greek yogurt

¼ cup cold heavy cream or whipping cream

2 tablespoons 9°80° Pineapple Coconut

Directions:

Add all ingredients to the bowl of a stand mixer fitted with the whisk attachment, or use a hand mixer.

Begin mixing on low for about 20 seconds, until the liquid cream begins to mix into the yogurt. Slowly increase power to the highest speed.

After about 2 minutes of whisking, reduce speed and shut off mixer. Use a spatula to give the yogurt a quick mix – push down the sides of the bowl and make sure the very bottom is mixed in.

Continue mixing for another 2-3 minutes, or until peaks form when the whisk is removed. The peaks will not be super stiff, but will still stand up.
