1 lb Large Sea Scallops
2 T Olive oil
9°80° Pineapple Coconut
1/4 cup Fig Jam
1 T 9°80° Charleston Hot
Marinate scallops in 9°80° Pineapple Coconut.
Heat skillet on medium-high heat and add olive oil. Sear scallops 4-5 minutes per side or until internal temperature reaches 150°.
Combine fig jam and 9°80° Charleston Hot.
Place Spicy Fig Jam on center of plate and top with scallops.
Garnish with parsley or zucchini spirals.
